Sure, iTunes can very easily convert a given (unprotected) audio format to MP3 (or AAC if you like). First go to the preferences and click the "Import" icon to reach the import preference pane. Once there, you will see the default importing codec (i.e. Encode using AAC or MP3, etc.). If you want MP3, choose that as your importing encoding preference. Now, not only will you be able to import CDs into MP3 files, but you can also easily convert an AAC file to MP3. Close the preferences, then select the AAC file you wish to convert. Once selected you can either right click on the file and you will see the option to "Convert Selection to MP3" or you can go to the "Advanced" drop down menu while the file is selected and choose "Convert Selection to MP3"... alternatively, if you had AAC selected as your encoder in your 'import' preferences, it would say "AAC" instead of "MP3" in both menus.
Now having said all this, it may be a non-issue for the next episode of Podshock...
